Making cheesecake at Cooking Club
 

Cheesecake Recipe – makes 12 mini cheesecakes

Ingredients:

  •          2 tubs of 200g cream cheese
  •          50g of icing sugar
  •          2 lemons
  •          Splash of double cream
  •          75g of butter
  •          150g digestive biscuits

Method

  1.      Mix together the cream cheese, lemon (juice), icing sugar and double cream. Mix well.
  2.     Heat butter until melted in the microwave.
  3.     Crush biscuits into tiny pieces in a bowl and then add the melted butter. Stir in.
  4.     Spoon the biscuit base into your cake case and press down.
  5.     Pile cheesecake mix on top of the biscuit base and smooth down the top.
  6.     Add lemon rind to the top to decorate.
  7.     Put in the fridge for at least an hour to set.
